Spotting an overlooked niche in the market, a Chinese entrepreneur is planning to launch a range of fish wine, Xinhua reported. Sun Keman, a former fish trader based in the northeastern port city of Dalian, has formed the Dalian Fisherman's Song Maritime Biological Brewery which will clean, boil and ferment fish into wine, the report said. The result falls short of the usual 11% or 12% alcohol content but Sun claims orders are coming in from across China, Japan and Russia.
